I know it's a little early in the season for salsa (although I did just feed my chile plants and put in some tomatoes & cilantro last weekend ) but I need to make some salsa tonight. And I have lost the recipe I used to use.
So I was wondering what favorite recipes y'all have? Time to try something new! |

it's never too early for salsa-- in mexico we eat it year round!
one of my favorite salsa recipes is very simple--
take a few dried red chilies and lightly toast them (in spanish the chile is called "chile de arbol")
roast a couple of roma tomaties
in the blender, first chop the chilies (if they are not toasted first, they won't chop nicely) then add a clove of garlic and the roasted tomatoes. salt to taste. simple but delicious with some totopos.
one time i tasted an absolutely delicious salsa at a tex-mex restaurant in austin, texas called "el chile." (how fitting!) it was a smoky roasted poblano salsa that was absolutely addictive. if anyone has that recipe, i would kill for it! |

Thanks Chucha -- you are already helping me because for some reason I never roasted my chiles and tomatoes. This is going to be much yummier.
But, what are totopos? |

| totopos are fried tortilla chips...usually we serve a few over some refried beans or with salsa! |
