Very slow cooking

I am playing around with slow cooking at the moment and by that I don't mean in a crock pot but more a very slow oven cooking has anybody explored this a bit?

I have tried two slow roasting recipes from Michael Chiarello. One is forever roasted pork, the other lamb. They were both exquisite and worth the wait. Not too difficult, either. Melt in your mouth, yummy!
