Hi everyone,
I am looking for the perfect crepe recipe. One that is going to taste and look like those beautiful French ones you can buy on any street corner (well you could back in 1980) and are absolutly to die for.
Reason is I am making seafood crepes at work and my current recipe was a little disappointing. So are the pans that I have to use to make them. I prefer the cast iron pan but alas we have rather worn and abused teflon fry pans.
Any suggestions would be wonderful.

| I haven't tried Clotilde's (yet), but my favorite, and the favorite of french husband, is Julia Child's, in Mastering the Art of French Cooking, the one that uses a bit of beer. This is a sweet crepe, you don't taste the beer.[/i] |

| When I loved in France, beer was a non-negotiable in our crepes. It's what makes them light and bubbly and slightly spongy. I use Childs' recipe as well, though I haven't tried Clothide's... |

And you know, I am usually so careful about typos (I am a university prof) and as the crepe post was going out I desperately tried to stop it because the possessive on "Childs'" is incorrect, it should be "Child's."
And yet, I paid no notice to "loved" I guess because, even with the typo, it is not incorrect
