Yum, yum
Cake
1 c. of dattes
1 c. of boiling water
1 teaspoon of baking soda
1/4 c. of butter
1 beaten egg
1 c. of sugar
1 teaspoon of vanilla
Mix all the above ingredients and then add:
1 1/2 c. of flour
1 teaspoon of baking powder
Mix well and cook in an ungreased pan at 375F for 40-45 min.
Icing
10 tablespoons of brown sugar
1 cup of shredded coconut
4 tablespoons of condensed sweetened milk
6 tablespoons of butter
Stir and bring to a boil until it thickens, about 5 minutes.
Cover the warm cake with the icing. |

Donna,
It sounds to me like it would be for Queen Liz the First. The coconut would be extremely exotic and only affordable by the rich, as would the dates. I'm not sure it's for our current Queen tho'. ...who knows, maybe Helen Mirren would like it!
