Fabulous information. I have always loved Indian food. For years I was lucky enough to work with a physician who had his office in his home. His family was very traditional and always cooking. I LOVED eating in his home, it was fascinating to watch his wife cook. I especially loved watching her cook the puri.
Funny thing is that they asked me to cook a meatloaf for them, which I happily did. It was the first time they'd ever eaten one. I was amazed when they asked me, I had never thought that the cuisine of my country would be something they'd be interested in like I was interested in theirs.
I have several Indian cookbooks by Madhur Jaffrey. I have very small bowls in which I measure each spice before I started the cooking process. This really helps, especially when timing is essential when you're dry roasting the spices. _________________ Cathy
