These have a unique crunchy texture. I found them @ Allrecipes.
Sesame Coconut Cookies
INGREDIENTS:
2 cups butter (no substitutes),
softened
1 1/2 cups sugar
1 teaspoon vanilla extract
3 cups all-purpose flour 1/2 teaspoon salt
2 cups flaked coconut
1 cup sesame seeds
1/2 cup finely chopped
almonds
DIRECTIONS:
1. In a mixing bowl, cream butter and sugar. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in the coconut, sesame seeds and almonds. Shape into three 10-in. rolls; wrap each in plastic wrap. Refrigerate for 1-2 hours or until firm
2. Unwrap dough and cut into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. Bake at 300 degrees F for 25-30 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

Melt some good chocolate and cover half of each cookie, or just drizzle if you like. |

| Fantastic, GP. I love sesame in cookies & just happened to pick up a bag of unsweetened coconut a few weeks ago, quite absent-mindedly without a particular purpose in mind. Perfect timing, thank you! |
