If you're like me, you're up to your eyeballs in zucchini right now.
I have no green thumb, so am not growing any myself, but friend after friend keeps arriving at my house making delighted declarations such as, "You like to cook! Here...have 5 lbs of zucchini!"
I've made zucchini bread, zucchini muffins, grilled zucchini, and quinoa with zucchini.
I was getting sick of Zucchini.
Fortunately an old recipe of Food and Wine had a YUMMY recipe for Fried-Zucchini Spaghetti. This definitely defeats the purpose of it being healthy...but damn is it good.

I live in a rural area where we never lock our cars---except starting in late summer. If you leave them unlocked at that time the zucchini bandits will leave unending presents of zucchini and yellow squash.
Me, I'm always forgetting to lock up. So, through the years, I've collected numerous recipes to use of the lagess of other people's gardens. Here are a few of my favorites. If anything appleals particularly I'll post the recipes:
Zucchine Pappardelle with Tomatoes and Feta
Tomato Zucchini Tart in Potato Crust
Grilled Zucchini Roulades
Zucchini Patties
Spicy Squash Cakes with Salsa
Summer Squash Timbale
All sorts of stuffed zucchini
Don't forget, too, that summer squashes are a major component of Caponata. I make big batches of it every year and can it in half-pint jars for use all year round. |

Sure thing, Erin.
And don't forget that all summer squashes are interchangeable. So, if a recipe says "zucchini," and all you've got is yellow crookneck, it's no big deal.
Zucchine Patties
2 cups grated zucchini
4 garlic cloves, minced
Lots of freshly ground black pepper
A large dollop of yogurt
1 egg, beaten
4 tbls flour
1 tbls cilantro, minced
Cream as necessary
Combine all ingredients to form a thickish batter. Drop by double-tablespoons onto a hot, lightly buttered griddle. Cook until golden brown and the edges start to dry. Flip and cook until second side is golden. |
