Debbie: Thanks for the feedback on my recipe; I'm so glad that someone here tried it out, as it was such a hit when I've made it. Adding the chicken stock enhances the Sweet/Salty taste, but I understand with Vegetarians about. _________________ Outside of a dog, a book is man's best friend. My housemate made an excellent spinach risotto this evening. (I've had risotto as main dish or side dish for dinner for the last 3 nights, and it looks like leftover risotto is on the menu for tomorrow. Is this obsession of mine getting out of hand? ) She used gorgonzola cheese along with parmesan. I'm not usually a fan of gorgonzola, but this was quite lovely.
The apple risotto sounds fantastic. I like the idea of serving it with pork - sort of a dressy alternative to applesauce!
