First, the flavor--a definite Yes, and ditto for the addictive texture. Make these tonight or for any occasion. I will make these again for sure.
The almonds maybe could be toasted, to enhance taste, or would this interfere with the chewiness of the little bars?
The buerre noisette was a little tricky, because I could not see if the butter was browning--too much white foam in pan. However, the "nutty" smell was unmistakable, and I think I cooked it just enough.
I happen to have a silicone "financier" pan--this was its first use, 24 little domino sized depressions. I tasted plastic--so the next batch I made in a metal mini-muffin pan. (I do not know if the plastic taste is ALWAYS present in silicone-baked goodies.)
Rich (my SO) is very happy with this new addition to his dessert choices! |
