Made this to rescue friends from under a pile of peas and such. What a neat thing! Look at my website for the picture! [url]knifethrower1.blogspot.com[/url]
2 cups shelled fava beans
1/2 cup shelled peas
1 small sweet onion, minced and sauteed until lightly browned in EVOO
Low Sodium organic chicken broth (I used Trader Joes)
sea salt
4 tablespoons fresh minced chives
1 healthy sprig fresh dill
cracked black pepper
Mascarpone cheese for garnish (optional)
Simmer beans in about 2 cups of broth for about seven minutes, or until fork tender. Transfer them to a blender and puree until smooth and thick soup consistency, using broth to thin the soup as needed. Add chives, dill pepper and a bit of salt to taste. Keep thinning and correcting seasoning as you go. Chill for two to three hours and correct seasoning and thickness before serving with a dollop of cheese and greens for garnish. _________________ There is only one way to die- With a full stomach and a good tan. |
