Melted low fat dairy spread, to grease
265g (13/4 cups) self rasing flour
40g (1/4cup) plain flour
1tsp ground cinnamon
140g (2/3cup, firmly packed) brown sugar
125ml (1/2 cup) skim milk
2 eggs, lightly whisked
50g melted butter, cooled
2 overripe bananas, mashed
1.Preheat oven to 180degC. Brush an 11x21cm loaf pan with dairy spread to grease. Line base and 2 opposite sides with baking paper, allowing sides to overhang
2.Sift combined flours and cinnamon into a large bowl. Stir in sugar. Make a well in the centre. Combine milk, egg, butter and mashed banana in a bowl. Add the milk mixture to the flour mixture and stir until just combined. Spoon into prepared pan and smooth surface.
3.Bake in the oven for 45-50min or until skewer inserted into the middle comes out clean. Set aside for 5 min to cool before turning onto a wire rack to cool completely.
4.Slice to serve.
5.Store wrapped in foil. |
