450 gms (1 lbs) dried white pea beans
1.5 L (6 cups) cold water
1 large onion chopped ( I just used a big yellow one)
115 gms. (4 ounces) salt pork, bacon or pork jowl !
3 apples, peeled, cored and cut into pieces (I used Granny Smith)
180 ml (3/4 cups) maple syrup
125 mls (1/2 cup) salsa
30 mls (2 Tbsp.) molasses
45 mls (3 Tbsp.) dry mustard powder
Cover the beans with the cold water, put the lid on and let soak overnight.
Drain beans, return to saucepan, cover with fresh cold water and bring to a boil. Once at a boil turn the heat down and allow to simmer, covered, for an hour or until tender. Drain the beans and reserve the liquid.
In a good sized casserole or baking dish (I used my mid sized Creuset) combine the beans, onions, diced salt pork , apples, maple syrup, molasses and mustard. Add enough of the reserved water to just cover. Stir well. Cover and bake in a preheated 150 degree C ( 300 degree F) oven for 4 hours. Stir occasionally and add more reserved water as needed to keep the beans just covered.
About a half hour before serving remove the lid and allow the beans to brown.
I was attracted to this particular recipe because of the apples! They make it a slightly lighter, less dense offering.

As soon as I am off crutches I shall get the ingredients and make a batch of this. It sounds delicious. _________________ If you cannot feel your arteries hardening, eat more cheese. If you can, drink more red wine. Diet is just "die" with a "t" on the end. Exercise is walking into the kitchen. |

It is a great recipe Debbie. some might find it a bit too sweet so they might want to skip the molasses--which were listed as optional anyway I think. _________________ Vivant Linguae Mortuae!! |

What crutches Debbie? Are you OK?
It will never be cold enough in this hot country of mine so as to make these beans . What a pity!

Thanks Simona, yes I am ok.
Had a little motorcycle accident (first one ever) and have to keep of my left leg for a while till it heals. No breaks, just lots of soft tissue strains, and bruised bones.... think bruised bones are more painful than a break to be honest.

Oooh, Debbie. I hope you mend soon. Sometimes those soft tissue injuries take longer than broken bones to be fully healed. Sorry to hear of your accident.

Thank you for your kind thoughts.
I too want to heal quickly so I can get back on teh bike and continue exploring and finding new places to visit - and different foods as well of course.
