Molasses Whipped Sweet Potatoes
Yield: 2 quarts
Ingredients
3 large sweet potatoes, about 3 pounds
2 tablespoons unsalted butter
1 teaspoon kosher salt
¼ cup orange juice
½ tablespoon of brown sugar
1 tablespoon of molasses
1 teaspoon of ground cumin
2 tablespoons maple syrup
Directions
1. Preheat the oven to 400 degrees F.
2. Place sweet potatoes on a baking sheet and roast until easily pierced with a fork, about 1 hour.
3. Peel the skin off of the sweet potatoes while still hot.By hand or mixer, smash potatoes until all large chunks are gone. Combine the potatoes, butter, salt, orange juice, brown sugar, ground cumin, molasses and maple syrup in a large bowl. Continue to mix all together until all lumps are gone. Adjust any of the seasonings to your specific tastes. Can be made the day before _________________ "I've never accepted the external appearance of things as the whole truth. I was happy up until I read the dessert and saw the pairing with "California Champagne". They drank sparkling wine. Unless the bottle was Veuve Clicquot or my personal favorite, Taittinger, they did not have champagne. I agree, there's been an obnoxious ad campaign about California "Champagne" lately. Just because they use a French word doesn not make it more fancy. thought it was almost illegal to name something champagne if it's not...in Australia it's been years since the word was used to refer to bubbles produced in Australia..

I am not sure what the rules are in Oz, but I know it's illegal in the EU. Since we are neither our "clever" marketers have decided to ignore such things. They haven't really noticed that we have learned a thing or two about food and drink over the years.
Ahh. . . out dated marketing ploys. When I was six I thought all British people did was drive around the countryside exchanging jars of mustard. _________________ "It's watery....and yet there's a smack of ham."

Mustard no. But chutneys, definitely! And jams/preserves. In fact the Women's Institute is famous for home made jam and chutney making.
Tho' Erin, you do know that mustard is the real British currency and we only use pounds sterling for overseas shopping. _________________ Confusion comes fitted as standard. |
