i bought half a kilo of gorgeous fresh pistachio nuts from the market, squeezed one out of its autumn hued skin, especting to find a soft kernal - alas I found a hard centre.

I feel so stupid, can anyone help, what do I do with them all comments greatfully received!

Oh yum! I love pistachios.

I would imagine they are boiled in salted water then heat dried. Not positive though.
